Forgive me if I'm being dumb - just got a new Mac mini recently with High Sierra, and when I go to the download page, it only shows buttons to download for windows or Linux. Any ideas why I can't download GIMP?

Assume you are looking for Gimp 2.10.0 all depends on third-party kind people compiling for OSX.
You could try the OSX version from Partha: http://www.partha.com McGimp 2.10 Standard Edition.
