Can someone help me restore color to my photo. I made edits to it and want the post edit color restored. Gimp will not simply let me undo.

Did you close Gimp and re-open it? Or close the image and re-open it?
If so Undo will no longer work.

Always best to work on a copy of the original image.
Duplicate the layer and do edits on the duplicate layer.
