I am trying to create an svg path of an infinity symbol, but i can't seem to be able to do that,
every time i go to Select->To Path it creates multiple paths two for the outline and one for the holes.

i want to have it be just a single straight line.

i have attached what it looks like, as you can see its multiple items and not just a singular straight line.
Why don't you construct the path directly with the path tool? You can use guides and the flip tool (in Transform: path) mode to make sure everything is symmetric.

But if you want to create SVGs, the tool of choice is InkScape, not Gimp.
You will need to practice.  Use the paths tool. You can get away with just 4 control points (nodes)

Pay attention to the path tool cursor. A double circle to join end-to-start / 4-way arrow to click and drag / avoid a square shape which starts a new path.
