Maybe CmykStudent will come up with an updated revised version.
The latest development version Gimp 3.3.1 commit 21374bb (as of today) does not have the modified code. That was in a development build commit d51e115 The links in the earlier posts just give a 404 not found error. These appimages only have a 5 day life before the next commit. I still have the old appimage in my archive and while it works there are problems. Very slow on larger images. Filters such as color curves weird. It will come but for the moment stick with the old color-proofing before exporting with the CMYK option.
Just for anyone else the mod looked like this: (no longer there) (1) Image Mode -> (2) select a CMYK icc and (3) it shows as such in the title

Yes, now I can confirm that my AppImage GIMP 3.3.1 does not have the said CMYK feature. In my test, GIMP does not show a "CMYK" under Color Mode, no "CMYK color..." on the titlebar either. I will wait for the next development AppImages. For your advice, okay I will stick to the old color proofing and CMYK export. Thank you @rich2005 and @CmykStudent.

rich2005 and Malsasa: Hi! Yes, CMYK mode is still a work in progress. It's "functional", but not a great user experience yet.
Currently I'm reviewing a lot of the internals and trying to make them more "color space neutral" - for instance, all the layer mode code assumes the input and output is RGBA only, which means the Key/Black of CMYK is treated like transparency. After that, I'll be reviewing performance and trying to get that better. Hopefully we'll have a version of it ready for the first 3.3 dev release, depending on when that is.
