I wonder if I can get some recommendations for a Drawing tablet that is compatible, or just really good for GIMP.
I'm using GIMP 3.0 on Win 11, I've been using GIMP for a few year now on and off, for both artwork, and Photo editing. So I was wondering what Drawing Tablets others user use. There are so many choices out there, and having Googled the best choices for GIMP I'm still not sure what to purchase. I have a budget of around £50, and I know that probably limits me.

Always dangerous to recommend anything, works for me might not work for you. However with that caveat.
Device support can be a large factor. The tablet will need some compatible software/driver. Not usually a problem for well established makes such as Wacom and Windows. You can get a small Wacom tablet for about £50 (Amazon) Upgraded for-ever-more-software is not a given, I have a 2005 Wacom where Windows support stopped in 2007. Fortunately still works with linux.
Bottom line, a Wacom is the safest choice.A couple of years ago, I got a Veikk A50 - big discount - £30 for a large tablet and their website is not bad, they do software for all. A Veikk A30 currently £40 - £50 (Amazon)
Then the crunch, does it work with Win11, Got the latest Windows driver, I can only try in a Win11 (Vbox VM) / Gimp 3.0.8 and maybe not a 100% but seems usable. I do not know if this is usual, but in edit -> preferences -> input devices I was expecting a stylus pressure curve. Not there.

Maybe you are expected to use the tablet software for that, which does work.

One of the most seen complaints is no pressure / opacity. I often wonder if the user knows how it works. You do need to use brush dynamics. Largely working, Speed of stylus perhaps not effective, I think it needs speed-of-light for this.

Since you are UK, distance selling applies, 30 days to (hopefully) get your money back.
