From you screenshots it looks to me that you are using the wrong menu to resize the tool box icons, however...

It will depend on your monitor. If a 4k screen then you will be stuck with small to view icons. Not much you can do about that.

The Gimp 2.10 settings and interface are for average setups.

This my laptop, Kubuntu 16.04 and the Gimp 2.10.2 flatpak. Laptop screen is 1920x1080 (HD)

Full desktops so scaled down a little: For comparison.

Play around with what you have. This thread is now well away from Gimp documents.

I haven't run GIMP for prolonged time.  About 15 years ago eversince changing the OS from Windows -> BSD -> Unix -> Linux(now) I changed the GUI graphic editing software from PhotoShop to GIMP.  In rare occasion I did photo editing.  Most the time I use ImageMagick and ffmpeg command lines to edit graphic images.

Now I'll come back.  I'm busily collecting relevant technical info in re using GIMP.  There are tons of them on Internet.

Anyway lot of thanks for your assistance and your time spent to help me.

I removed several of your links. See the forum standards https://www.gimp-forum.net/misc.php?action=help&hid=9 and the bit about The poster (not you - the video maker) may obtain monetary benefit from the number of people clicking on the link

Not only that, much of the content that is not advertising, is not very accurate as far as using Gimp is concerned.
