Since the latest update, changing the font doesn't work except in English. 
I was able to change it to select a font from Filter at the right sidebar and it doesn't work any longer. 
Hope it will be fixed in the next update.

No good asking here about fixing in the next update. That is determined by the Gimp developers.

You could post a bug report here: https://gitlab.gnome.org/GNOME/gimp/-/issues

Give them all the details, including the language and font that is the problem.
