Need to change the color scheme

I can barely read the black text with a gray background that my Gimp is using.

How can I change that?

Edit > Preferences > Interface > Themes
Try some out and see if they are better for you Smile

Thanks for the screenshot in action [Image: thumbsup.png] this did allow me to find out what's going on.

It's because you are trying to write a text outside of the image / canvas,
You can increase the canvas size by going to the menu Image ➤ Canvas size or write inside the canvas/image, then move your text and eventually go to Image ➤ Fit Canvas to Layers to see your text.

As PixLab indicated, the text layer is outside the canvas. 

You can see what is there using the toggle View -> Show All The background changes to a checker pattern. Then decide to move the text or increase the canvas size.
