Does anyone know where I can find the privacy policy is of gimp?
What information do they collect on us and whatever we publish?

AFAIK there is no privacy policy because there is no data gathered.

You can read the whole source code (and even build your own version from it) and check yourself that there is no information collected. I think some future version may "call home" to see if there are updates, but AFAIK there is no intent to gather user data (and these attempts would be easily thwarted by publishing another version with such code disabled).
