I have searched (here and elsewhere) but can't find a way to set the default text (e.g. font and size).
Mine is stuck on 62pt monotype. Each time I create a new text layer, it defaults back to this. Typically I want to use the same size and font in my particular projects. When I create a text layer in 24pt Arial (for example) without closing the image, if I try to create another text layer, it defaults back to 62pt Monotype again, and I have to change it each time.
This is a real pain. I use linux but it seems that not yet fixed in Windoze, although ok with linux 3.2.2
As Tas_mania, the default (should be) Save the last settings, including font, on exit from Gimp, Next day, Gimp has same font as last used. What you get is that not last used but the very un-attractive MonoSpace font.
No fix that I know. You can make presets as sallyannne suggested.
or
keep the font dock and tag the fonts you usually use. see: https://docs.gimp.org/3.0/en/gimp-tagging.html
This a 1 min 40 sec animation of tagging fonts. https://sendvid.com/jtokabfi
Still does not fix the font size unless you untick "save on exit" from Edit -> Preferences -> Tool Options
