Some tips for your specific post. Composite screenshots, there is a limited number permitted by forum.
(1) Under-used option but put into View -> Show All to see what is outside the canvas.
(2) Add text, it can be multiple text layers or a single layer. Pad out by using spaces, including one at the end to give a bit of space.
(3) If any text box is not in Dynamic Mode (it can change to fixed if you size the box) make it dynamic. This makes the box tight around the text.
(4) Make sure you are on the photo layer.
(5) Image -> Fit Canvas to Layers makes a canvas size enclosing the text layers You should see a dotted line which is the new canvas size.
(6) Layer -> Layers to Image Size does that, makes any selected layers the image size. You want to leave the text as text so do not select those.
(7) Layer -> Transparency -> Remove Alpha Channel to make that bottom area opaque. This uses the background color, so change it if you do / do not want white.
(8) Finally back to the beginning. Untick View -> Show all.
Now Save your work as a Gimp .xcf - keeps layers and text .....
For (say) printing you can Export as a png/jpeg/ tiff....which flattens the image and you lose the layers.
Always more than one way using Gimp, mix-n-match with other procedures.
