There are problems with the text tool and while Gimp 3.2 Works ok for me in linux, Widows users are reporting some of the effects you are experiencing. Example unable to edit text https://gitlab.gnome.org/GNOME/gimp/-/issues/16169 Must be the same for OSX.
If you can, wait a week (or so) for Gimp 3.2.4 release. Text tool supposed to be fixed.
There is a way of recovering text using Gimp parasites but it is a replace text for editing and once saved, it back to the original problem.
