Really you would need your old Gimp installtion. Any path that is in Edit -> Preferences -> Folders -> Fonts
By default just the two for Gimp 2.10 replace 3.0 with 2.10
C:\Users\yourname\AppData\Roaming\GIMP\3.0\fonts
and if you installed for all users (Gimp 3 installer now defaults to a User only location)
C:\Program Files\GIMP 3\share\gimp\3.0\fonts Normally nothing in there.
plus
All the fonts installed in Windows - C:\Windows\Fonts
...but can also use for you only: C:\Users\"yourname"\AppData\Local\Microsoft\Windows\Fonts
EDIT: This just a guess, what I think happened in the past
(1) Make some text, and it correctly shows in the tool options and in the canvas editor
(2) Use the canvas editor to select text and change the font. The original font name still shows
(3) Selecting the changed text will show the font name. Note the tool options still shows the original font.
To change all the text in a text layer always better to use the tool options.
