JEEZ... That video was very painful to watch, this guy does not know how to use GIMP! I almost felt that I was downgrading while watching....
That being said ... After Text along path ➤ No need to selection if there is no more manipulation, instead do Edit ➤ Fill path and you're done. (and you have saved at the very least 3-5 clicks and I stop here...)
The red border is not a border as you feel, it's just the path made visible
Go to the path tab/dialog and untick the eye (BTW, on the Parker's video he is telling you this at 11:22 ...)
In case, you might still see something if the path tool is selected, just select another tool
