Im no expert on this topic, but i think what you need is a dedicated brush.
There are animated brushes simulating different painting tools, you can download on the internet.

Using a dynamic such as random angle can help to get variation, but i think dynamics and painting perform best with a pressure sensitive tablet.
Also adjusting the Spacing of the brush can give you variation.
